In reviewing potential 2017-18 harvest washed Ethiopian coffees, we found lots from Nansebo Worka in the Oromia region to be standouts across the board. This year, our producing partners practiced a special preparation technique in which coffees were separated by screen size. This is an additional consistency measure that isolates and highlights positive qualities inherent in the bean, with the added bonus of roasting and extracting more evenly than in typical lots.
Among the screen size separations we found size 16 to perform especially well, providing notes of tropical fruit and floral white tea with a delicate yet resilient body. It has earned a spot in our cafes on our limited pour over and single origin espresso menu including as our inaugural single origin espresso at our cafe in the Meier & Frank building.
