Story

Much credit is due to our importing partners Zelelam Girma Bayou, Emily McIntyre, and Michael McIntyre for continuing to implement screen size separation which guarantees a uniform size of coffee bean for consistency and even roasting. Again we have selected screen size 16 (moderately large) for intense aromatics, rich complexity, and balance.

Credit is also due to Zeneba Ganale, an experienced washing station manager dedicated to processing these already-ideal coffees to high standards using float tanks to separate under ripes. Precise washing protocols are implemented utilizing fresh water from the nearby river, as well as drying standards capitalizing on cool and consistent airflow moving upwards from the river valley below.
